It was with good foresight and fortune that Leon Tokar decided to plant the then little known Spanish variety Tempranillo in 1999. We now have the some of the oldest Tempranillo in the Yarra Valley, planted directly outside the Tokar Estate restaurant. Spur pruned to a VSP trellis. The leaves are enormous on the vine so a couple of leaf removals are performed through the growing season to encourage sunlight on to the bunches, enhancing the colour and structure of the wine.
A small portion of our mature Tempranillo block was harvested for this wine in March 2012, whilst the flavours were bright and fresh. Fermentation by wild yeasts was encouraged before being suddenly halted by the addition of brandy. The fortified wine was kept on skins to gently extract tannin, building a structure to carry the intensity of fruit and ensure longevity. Fifty months maturation in seasoned French oak barrels followed, resulting in La Tentadora, a unique, wine that can be enjoyed now but will live a lifetime.
Deep in purple colour with rich Violets . The nose is quite subtle and aromatic, once again getting Violets up front but becomes more exotic as it opens up. These flavours are followed on to the medium to full bodied palate which in turn leads to an intense and complex dessert wine
