Tokar Estate’s Chardonnay block was established in 2007 by grafting two acres of the gentle North facing Shiraz block (planted in 1998), with the Chardonnay clone I10V1. Half is cane-pruned, whilst the other is spur-pruned.
Winemaking
The fruit was handpicked in early March, crushed and pressed to tank. The cloudy juice was then transferred to French oak barrels (30% new and mostly 500L puncheons) to ferment with a yeast strain isolated in Burgundy. No Malolactic fermentation was encouraged and the wine remained in barrel for 6 months before being blended in tank for further ageing on lees, before being prepared for bottling.
Sensory Analysis
The 2020 Chardonnay is pale-gold in colour with brilliant clarity. The aroma is dense and complex with white nectarine, grilled cashews, apple skin, biscuit, and a touch of wet slate-like minerality. The complexity continues on the palate with the oak playing a supporting role, bringing a coffee note before a long citrusy finish. This wine has the classic Yarra Valley Chardonnay drive and age-ability, and is best enjoyed alongside lightly grilled chicken or fresh barramundi with a crisp salad.
